There is no specific user guide as this is an extreme detailed oriented process and every Manufacturer has different teams for each area.

They will have test station to test each function of a phone such as camera testing, UANT/LANT testing, Display testing, Audio testing, Funtional sensor testing. They will design a test tool and test station for such kind of phone component. You could research for each one to have knowledge on it
