UMAT will extract only the User Plane(from GTPU up and down), the signalling (such as OCS communication) is not going to be converted.
I was in the same situation as you, wanted to have everything in wireshark, but UMAT does not allow this.

Maybe there is someone with enough knowledge to **** this and allow everything to be converted, but I did not find this guy yet

You want to say that I can convert not only user plane but Diamater messages to wireshark cap with UMAT?
